Cinnamon Chip Bread

Cinnamon Chip Bread
Make your cinnamon chips ahead so they have time to cool.

1/2 cup warm water
5 tsp yeast
2 tbl honey
Allow to bubble

1/3 cup scaleded milk, cooled
1/2 melted margarine, (soft) You should be able to use oil, applesauce, butter, yogurt.
1 cup bread flour
Mix well

3 eggs or 3 Tbl ground flax seed with 9 Tbl water. Mix ahead allow to thicken.

1/2 tsp salt
1 cup fine ground wheat flour
2 cup all purpose flour
2/3 cup sugar

mix well and knead possible need more flour for kneading. If hand kneading, knead for about 8 min, and then add cinnamon chips and knead for 6 min more. Cover and let double in size. If you have a bosch or kitchen aid, mix in cinnamon chips after all of flour is incorporated.

Allow to double in size.
Punch down and shape into loafs you want, or rolls. Allow to double in size again and place in preheated oven at 350*

Round Loafs 30-35min
Rolls 15-20 min
