Baked Sweet Potato Fries


Baked Sweet Potato Fries

Total Prep and Baking Time: 45 minutes
Yield: 2-3 as a side
2 sweet potatoes, peeled and cut thin into “fries”
1/4 cup freshly grated Parmigiano Reggiano
1 tablespoon olive oil (we used black truffle oil because we had it – thanks, Mom!)
1/4 teaspoon ancho chili powder
salt and pepper, to taste
1. Preheat your oven to 450 degrees F. Grease and/or line a large cookie sheet. Cut up your sweet potatoes and toss them with the cheese, the olive oil, the chili powder, salt, and pepper.
2. Arrange the fries in a single layer on your baking sheet and bake for 15 minutes, flip over, and bake for another 10-15 minutes, until crisp. Serve warm.
